Breakfasts this week will be oatmeal (I make a lot on Monday at eat it for a few days, storing the pot with leftovers in the fridge), fried eggs with sauteed greens and toast, and hopefully a batch of homemade breakfast sausage.
Lunches will be leftovers, hummus, egg salad with homemade mayo, and pizza balls.
Rodriguez Family Meal Plan November 12-18
Monday: Big Pot of Beans with chips, salsa, cheese, avocado
prep: thaw & cook chicken for later in the week
Tuesday: Use leftover beans to make Mexican Chicken, Bean & Rice Skillet (recipe coming soon)
Wednesday: Leftovers (Wednesday is our Sabbath)
Thursday: Pasta with cream sauce, mushrooms, peas, and chicken; salad with homemade dressing
prep: thaw beef
Friday: Crazy Good Coffee Pot Roast, Mashed Potatoes, and My Favorite Kale (recipe coming soon)
Saturday: Baked Potato Soup
prep: soak waffle batter
Sunday: Oatmeal Pecan Waffles from Festive Traditions
