Why make your own dressing?
Homemade salad dressing is easier than you think! With just a few basic ingredients you can whip up something much tastier and healthier than anything that comes in a bottle. Trying to avoid high fructose corn syrup and polyunsaturated oils? Make this easy change to improve your family's health, and you might just end up enjoying salads more, too!
Basil-Lime Avocado Salad Dressing
Ingredients:
1 avocado
A handful of fresh basil
2 garlic cloves
the juice of 2 limes
3/8 c. extra virgin olive oil
unrefined sea salt and freshly ground pepper to taste
filtered water to thin to desired consistency
Directions:
Combine all ingredients and blend until smooth. You can use an immersion blender, regular blender, or food processor. My vote is the immersion blender: less dishes!
Note:
I was surprised to find that the leftovers lasted in the fridge for a couple days without turning brown! Must be the lime juice. This recipe made plenty for two main dish salads two nights in a row.

DeleteAs far as my own dressings; I make a salad dressing with low-fat plain yogurt, the juice of a lime plus the zest, and salt to taste.
