Here is what we are eating for dinner this week:
Monday
Tex-Mex Cornbread Skillet, with soaked cornbread topping (This is one of our favorite meals!), salad
Tuesday
Perfect Roast Chicken, green beans with goat cheese and pine nuts, the easiest potatoes ever
Wednesday
Pizza (crust from Real {Fast} Food) topped with One-minute Pizza sauce, grass-fed cheese, local Italian sausage, and veggies
Thursday
A Big Pot of Beans with Quesadillas (filled with leftover roast chicken)
Friday
Brown rice pasta with pesto cream sauce (from homemade pesto in the freezer), leftover roast chicken, peas, and mushrooms
Saturday
Leftovers
Sunday
Curried Carrot Soup, Sourdough Bread, Salad
Lunches will be leftovers, tuna salad, hummus, or leftover chicken sandwiches.
Breakfast will fried eggs with kale and toast, or soaked oatmeal.
